Ingredients:
230g butter
2 TBS coffee
1 tbs vanilla essence
150g brown sugar
150g white sugar
2 eggs
260g flour
6g salt
75g dark chocolate (chopped)
150g milk chocolate (chopped)
Method:
1. In a pot on a medium melt your butter and continue to sir until it browns.
2. Take off the heat, and to this add your vanilla and coffee. Stir until combined.
3. Transfer your butter to a bowl, and place in the fridge to cool but not set hard.
4. Once your butter is cool, whisk in your sugars.
5. Whisk in one egg at a time.
6. Then using a spatula, fold in your flour, bicarb and salt. Stop folding as soon as the flour has combined. Don't over mix your dough.
7. Fold in your chocolate and place in the fridge for about 30 mins for the dough to harden so its easier to portion.
8. Divide your dough into 30g dough balls and then freeze for 1 to 2 hours.
9. Bake 180C for 18 - 20 mins.
